Greek Meatballs and Farmer Salad
Even though we are under quarantine. SPRING IS IN THE AIR! I love the fresh flavors of greek inspired foods and whipped up a quick batch of these meatballs. These are a great meal prep option because not only are they delicious, but they are PACKED with protein. This recipe makes 50 meatballs, but feel free to double or triple the batch and throw them in the freezer. They keep for up to 3 months!
These meatballs paired with a simple farmers salad, is my ABSOLUTE favorite quick go to for the spring and summer. The great thing about the salad is it GETS BETTER as the week rolls on because the veggies marinate in the delicious, homemade lemon dressing. Can’t wait for you to try them!
Ingredients
1 pounds lean ground beef
1 pound lean ground chicken
1 large egg
1/3 cup panko breadcrumbs (optional)
20 g finely chopped dill (a big handful, about 1/2 cup, the more the better)
2 tablespoon flavor god or Mrs. Dash original seasoning (or your favourite spices)
1/2 teaspoon garlic salt (or more based on your taste)
Directions:
Preheat the oven to 400F.
Line a big sheet pan with parchment paper
In a large bowl, mix all the ingredients really well.
Shape the ground meat mixture into walnut-sized meatballs and place on a baking sheet covered in parchment paper.I like using a small ice cream scoop to measure out the meat.
Bake in the preheated oven for about 25-30 minutes (or until cooked, depending on your oven).
Mix salad and top with meatballs. Garnish and Enjoy!
